Roasted Beet Salad

This recipe is easy to make and a great side dish or snack and can be adapted to use just abut any vegetable in the fridge.

Ingredients
  

  • 6 medium sized beets
  • 15 garlic scapes*
  • olive oil
  • salt, to taste

Instructions
 

  • Peel and slice beets. We used a mixture of regular and golden beets, but which type you use is up to you. Toss the beets with olive oil. Cook for 15 minutes at 350° in an air fryer.
  • Trim the ends off of the garlic scapes and cut into inch long segments. Drizzle with olive oil and cook separately from beets for 5 to 10 minutes.
  • Combine the beets and garlic scapes and add salt to taste before serving.

Notes

*Garlic scapes seem to stay fresh for a really long time in the fridge. Stock up in spring and use all summer.
