• 1/2 cup water
  • pinch salt
  • 2 cups shelled fresh peas
  • the leaves from 1 sprig fresh mint, chopped
  • 1โ€”3 teaspoons butter

In a small saucepan with a lid, bring the water and salt to a boil. Toss in the peas and mint leaves. Simmer 3 to 8 minutes, until peas turn brighter green and tender. Test as you go; the time depends on your ideal of pea-texture.

Quickly drain the peas when they are perfect, and shake them in the pan with a little butter. Serve instantly.

Serves 2 as a side.
