(Makes 2 Quarts)
• 3 medium beets, organic and raw, peeled and coarsely chopped (do not grate)
• 1 Tbsp sea salt
• 1 lemon, organic or washed really well, and divided into eighths
• Filtered or spring water (do not use tap or beets will not ferment)
• 2 quart-size wide-mouth mason jars or other glass containers with lids
Mix beets and sea salt together in bowl. Stir well. Split the mixture between two glass containers. Add 1/8 of a lemon to each jar. Fill with filtered water leaving no more than 1 inch of clearance below rim. Stir well. Secure lid. Leave on counter top for approximately 7 days. Refrigerate and enjoy!
